The component of garlic, allicin, which causes the familiar strong smell and flavor, is actually an extremely effective antioxidant. As allicin digests in your body it produces sulfenic acid, a compound that reacts faster with dangerous free radicals than any other known compound. Garlic is also a triple threat against infections due to its antibacterial, antiviral and antifungal properties. Some MANY years ago as a young kid knowing little about health, I came down with a serious flu like condition. I thought I was dying. Although ignorant I knew enough to stay away from "doctors". Hillbillies do learn some of the more important things in life early.

The only thing I could think of was chicken soup. So I made up a large pot. For some strange reason I felt compelled to put a half dozen garlic bulbs and MANY red onions in. I let the soup cool and added more chopped up fresh garlic.

Whamo I could feel the stuff working. No matter it was so strong I almost lost my stomach contents and had to slowly sip the almost unbearable concoction. Well I figured "medicine" should NOT taste too good. I was making medicine.
