Carrot Protocol 

   

Cooked Carrots are the very best way IMO to get many of the 750 members of the carotenoid family  

     

”In a study of older Italian women those who ate the most carrots and fresh fruit had a 60% lower chance of a heart attack. Those who ate the most green vegetables and fish had a 40% lower risk. Moderate alcohol consumption reduced the risk by 30% but heavy drinking increased the risk by 20%.”  Mario Negri

Cooked Carrots can supply many of your Carotene and Vitamin A needs

Raw carrots are high in fiber (See Fiber Protocol). Cooked Carrots are the very best way IMO to get Beta Carotene (See Beta Carotene Protocol) and all the other 750 members of the carotenoid (See Carotene Protocol) family many of which we require. The carrots must be cooked because the carrot cell wall is tough and your body will only digest about 5% or less raw carrot cells. Raw carrots do provide good fiber but to get the nutrients you must boil the carrots for about 15 minutes over a low heat. I let mine sit a couple hours to soften further.

      

Eat Fat Preferably Olive Oil with your Cooked Carrots

"Olive Oil according to a 2012 Purdue  University study does the best job of making those [fat soluble] compounds more bioavailable. The conversion from carotene to Beta carotene (ultimately all the forms of vitamin A) and all the other carotenoids in the intestines can only take place in the presence of bile salts. This means that fat MUST (See Fat Soluble Nutrients Protocol) be eaten with the carrots to stimulate bile secretion. I usually use olive oil, ground flax or butter. Olive Oil dies the best job and should always be used at least in a small amount if you use another oil.

Cooked carrots are a must for me but we must realize cooked carrots, along with most root vegetables, rate very high on the Glycemic index (See Glycemic Index Protocol). If you add a good deal of fat to your cooked carrots you will be lowering the glycemic index of your meal

   

Purple Carrots

Purple and other deeply colored carrot species can be highly nutritious.

Why does fresh pressed carrot juice taste so healthy? These may be two of MANY reasons. Carrot juice is a mainstay of the Gerson Anti-Cancer diet.

        

Your Eyes will thank You

In my case I find if I do not eat about two pounds or more of cooked carrots per week my eyes weaken. My eyes tell me when to eat cooked carrots. I have done this for forty years. Am I sick of cooked carrots? Yes in a way but I have learned to live with it.  The number of things you can use to spice up the bland carrots is endless and limited only by your imagination and your need for a specific healthful food.  When I fast my vision slowly deteriorates, by the fifth or so day of the fast I can barely read. After my fast about five to ten pounds of cooked carrots brings my vision back to normal. This happens every time I fast and I fast at least three times a year. Now what does this show?

      

Endless Ways to Spice up bland Carrots

I almost always put my required Celery Seed in, usually rosemary (See Rosemary Protocol) and red onions (See Onion Protocol), often cilantro (See Cilantro Protocol) or oregano (See Oregano Protocol) salmon (See Salmon Protocol). Then whatever herb or food I need to be eating at the time can go in. Top it off with perhaps a little Mustard, olive oil (See Olive Oil Protocol) or something healthy. You do it your way

My eyes tell me I need the cooked carrots but I suspect my whole body is thankful.
