Natto Protocol 

    

"In all my years of research as a professor of cardiovascular and pulmonary medicine, natto and nattokinase represents the most exciting new development in the prevention and treatment of cardiovascular related diseases. What makes nattokinase a particularly potent treatment is that it enhances the body's natural ability to fight blood clots in several different ways. Because it so closely resembles plasmin, it dissolves fibrin directly. Natto Super Food

Natto is a super food made from fermented soybeans. Natto originated in Japan. It is hard to get in the US. You can make it yourself but it is work. Natto does not taste good to the average American. For many Japanese as well as Americans Natto has a very unpleasant smell and taste as well as an unpleasant texture.

So why bother with Natto? Just reject it as another optional unpleasant aspect of life.

Seven Important Health Issues

It is my belief if you take the considerable time to research and understand the lengthy and involved Natto issue, seek out and actually eat Natto whenever you can you will probably be healthy until the day you die.

   

Seven of the most involved issues in health IMO are

Natto brings all seven together.

   

Natto is an excellent probiotic (See Probiotics Protocol). One serving of Natto is equivalent to taking eight capsules of Vitamin K2 at a fraction of the price and with far more benefits than isolated K2. Natto may remove unwanted calcium and phosphorus from your arteries, joints and other soft tissue and redeposit it into your bones and teeth. The nattokinase in Natto will help clean up your blood.

   

Natto Super Food

Folks you CANNOT ask more of a food than this. Find a way to get and eat Natto. You can put lots of healthful red pepper, onions, cilantro and horseradish on Natto to disguise its different taste. But I would eat Natto no matter HOW it tastes. Its not like you have to eat Natto every day, although I would if I had any of the major health conditions it may remedy, four or so ounces once or twice a week is all it takes. Natto keeps and freezes well. It won’t go to waste.  Please do not heat Natto when preparing it to eat; the enzymes (See Enzymes Protocol) are denatured at about 125 F.

Home made Natto – Welcome to Natto King!   Note some Natto Making Tips

It’s work making Natto. Be prepared to fail the first time unless you read up on the process a few times. Start out with small batches until you get your technique down. As long as your product is soft and has fermented you can eat your mistakes. I use about three times the Natto bacillus called for. Often after making a four pound batch of natto I will eat a bunch over a few of days as I let the batch cure before freezing. When I get slight cramps in my calves while sleeping I figure I am topped up with vitamin K and freeze the rest of my natto in half pound lots.

     

My Key points to making Natto

  • Use organic non GMO soybeans

  • Use no more than 4 pounds of soybeans for a batch

  • Soak Soybeans in good water for 48 hours, 72 if in winter

  • Cook Soybeans in water at simmer for 24 hours or until they smash easily and completely between your thumb and forefinger with little pressure

  • Use 3 times the natto bacillus called for

  • Mix the bacillus into four or so ounces of pure water with a tad of sugar and salt

  • Mix the bacillus liquid into the beans well. Coat each bean

  • Use ceramic non-metal cooking containers

  • Your bean layer in the container should be two and a half inches thick or less

  • Figure on about 2/3 square foot of container per pound of beans 

  • Keep natto fermenting  in oven for 24 hours at about 105 to 110 F

  • You need an oven thermometer to calibrate your oven

  • Put some duct tape on your oven thermostat control and mark 105 F

  • If your oven falls below 105 F you need a longer fermenting time

  • Put thermometer in oven with Natto batch

  • Check oven temp every hour and adjust until it ranges from about 105 F to 110 F

  • Once you get oven right leave it closed until batch is finished

  • You can age your completed batch in the Refrig for five days of so.

  • Store your natto bacillus in your freezer and it will remain viable six months or longer

    

For the record I LIKE the taste of Natto. The long gossamer like tendrils are unique in my eating experience.
