Rye Protocol

"Two groups with insulin resistance were fed identical diets except one group got their carbs from wheat, oats and potatoes; the other from rye. After twelve weeks fat biopsies showed in the wheat group sixty-two genes that promote inflammation, produce stress molecules and hormones and promote insulin resistance and obesity were "turned on"; in the rye group seventy-one genes that improve insulin function and prevent cell death were 'turned on"." Rye is a rich, hearty grain that has been consumed for centuries. Although you might find wheat and other cereals more readily available at your market, it’s worth taking a chance on this cereal grain. Rye bread and rye flour nutrition differs from wheat, barley and oat and often packs more of a punch, especially if you opt for the dark variety, which holds more potent health benefits. The rye seed, or rye berries as they’re called when harvested and sold in full form, are also healthy and useful in cooking. Rye flour tends to be more nutritious than wheat or barley because of the whole nature it comes in, with endosperm, which is in the outer hull of the rye berry or kernel. The endosperm holds potent starches as well as fiber and nutrients. It’s much harder to separate and remove the germ and the bran from the endosperm during the milling, therefore carrying with it more vitamins and nutrients into the end product of rye flour. Meat and dairy products were rare treats."   Doctor Wim Romijn, Note many of the "prosperous" items not available we know are anti-health if not pro-cancer. The Rye bread may be the kicker. Rye is rich in vitamin B17. This demonstrates that a primitive diet can be far healthier than a "prosperous" diet.

No, people on gluten-free diets currently cannot safely eat sourdough breads made with wheat, rye or barley flour, even if they are fermented. IMO Rye is a healthy substitute for the toxic wheat. If you but experiment you can make delicious bread and other rye products. I like a bread like like energy snack on a hike and make a healthy short bread with rye, butter, flax meal, buck wheat and molasses.

I have always liked bread now with rye I can eat it again.

     

Rye can be a super Healthy Gain if the gluten is dealt with.
